You can use the relative filter for date fields to specify any amount of time. For example, the below report will show all incidents that are not 'Closed', and were created over 7 days ago.

To all - just be aware that when I tested the "relative" option I found that it took the time into account, ie if Justin's report was run at 11am in the morning it would include tickets raised before 11am 7 days ago and not just the those created 8+ days previously.
This may or may not be an issue for any reports you run
cheers
eg
I have a report that shows changes where the planned start date is "relative after 4 days ago".
If I run this on the 25/06/2015 at 1:07PM the first record I have returned has a planned start date of 21-06-2015 16:45:35
If I change this to "relative after 5 days ago" I get returned a ticket with a planned start date of 21-06-2015 10:00:00 (planned for the same day but an earlier time).
