Trigger a flow from a date on a software deployment profile

I have no idea if this is going to be possible at all, but let's see what you think.
We've got a New Software Approval process that I'm helping build, and one of the things I'm doing it creating a new Software Deployment Profile via a flow based on what the user submits (if it doesn't match anything already listed). If it's for a trial, a date is provided at this time, which is recorded on the record.
What I want to look at though is at the point the software is installed, we don't want the flow sat idle for up to a year waiting for the date to come around. We want to have the flow end once all jobs are done, but then a new flow be triggered on the date provided for the Trial. When that date comes around, it would trigger a new associated flow that would fire off extra approvals/tasks for relevant teams to either package it for future use, or remove it etc.
Is this possible at all? I can do the new record on the SDP table etc, it's literally this triggering another flow based on a trial date on the record.
