Update End Users of Status of Ticket and Expected Resolution Time

We are looking for a way to update our customers on the status of their tickets incuding expected resolution times. We are looking at information we were given for using flow designer stages. The ask is being likened to a "pizza tacker" that shows the different stages of pizza from order to delivery.
Have any of you done this and would you be open to sharing any insight?
