when we go to the employee service center we can see my incidents in header when we click on it will show submited requests lable instead of that i need to change it to submitted incidents

ESC is configured to refer to all work as "requests" as end users struggle to understand the difference between a request, incident, case, etc.
You'd have to clone the widget being shown to change its behaviour solely for the page you're on, rather than change the widgets behaviour across its potential multiple uses on the portal
