If you go to Employee Center -> Activity Configuration in the main platform UI you can see how your widget is configured. There is also the options to create a new JSON list view to render summary information on the cards differently.
Tasks show a ref number as it's not really an area where there is choice (ie. I need to see what they are because I have to pick one specifically) these are tasks a user needs to action. So they need to into them and take an action(normally an approval). So overcluttering the summary doesn't make a lot of sense, as the idea is they shouldn't be left idle. Folks should be punctual with their approvals, and doing them in order of when received.
Appreciate that doesn't always work like that, but it's the idea.
I don't disagree with you that maybe having a summary would be nice there. The issue is with potentially longer catalog item names or short descriptions and how that renders in the card. And what value it brings when the approver should be clicking into these as they appear to take action.
