Organising request forms within categories and subcategories

In our end-user facing request catalog we have a category for business applications which is rapidly expanding and getting a bit cluttered. I have been asked to keep the number of categories to a minimum so I was hoping to utilise subcategories.
I was trying to adjust the categories and subcategories layout so that when you clicked on the business applications category, it displayed a limited list of forms which I could specify, and then had subcategories within that displayed all request forms to do with that business application. The idea would be that when you click on business applications you'd be shown a list of create access to app style requests, but then you can also click into the relevant subcategory to view everything to do with that app.
After creating a new category and subcategories, and linking the relevant request forms to where I needed them to align, I found that the category always displays everything from A-Z including the items within the subcategories, which doesn't resolve the issue I was trying to fix.
Has anyone found a way around this - am I missing a blindingly obvious setting?

I was given a guiding hand on this.
I needed to view the ESC as an admin, then CTRL + right click within the category I wanted to change to access the Instance Options, and then toggle off showing items from child categories.
Why the setting is here and not in the back end I'll never know.
