Hello,
We use a number of Quick Links within our ESC to point to articles and sites within our Intranet and other pages. Is it possible, either OOTB or not, to track the number of times a Quick Link is clicked?

I can provide you the logic and you probably can start
1) clone that OOB widget
2) check the script which triggers the onclick event
3) there you can pass the link sysId to new function in server side
4) in server side create a new record if not already created with count as 1
5) from next time onwards query link sysId and increment the count
