Best practices for HR acknowledge documents/policies

We are looking to build a series of "acknowledgement" HR policies in ServiceNow and I am wondering what the best practice is in Zurich HRSD with EC Pro.
I have seen a number of things online, including "Generate Document Acknowledgment" and the outdated "HR Document Templates" and "Lifecycle Events".
I am wondering if anyone can point me in the direction of how they manage very simple "acknowledgement" forms, like a 1 page policy that I need to track all employees (when they start) to sign they acknowledge the policy.
Is it just a Record Producer with the document and a checkbox? Is there something OOTB or fancy that I should be looking at?
