When using dynamic translation to translate fields on forms (such as short description or description on an incident) the text is translated to the language you have chosen in system settings. But is there any options to keep system settings on English, but still translate to another language of choice?
For instance, if I am a Norwegian agent, but I prefer to have ServiceNow in English, can I then in some way still translate the description to Norwegian?

So if I've understood your ask correctly, currently at least, DT will translate the source detected language into the user's preferred language (check here for more info on that). This therefore means, irrespective of the System default language, if your "preferred_language" or user preference language is set to Norwegian, then DT would translate the field into Norwegian accordingly,
