Catalog Items - Service Fulfillment Steps

Hi All,

I am  exploring service fulfillment steps based flow for catalog items.  I see it has only 3 stages, one of them is Service Fulfillment Process. when I create a new flow and add stages from request item template, I see fulfillment stage but not Service Fulfillment Process. I am not sure which one is correct

The OOB Step based request fulfillment also creates records in sc_service_fulfillment_stage_data,  sc_service_fulfillment_step_data, sc_item_variables_task tables. If we create our own flow we do not follow this process. whats the reason behind creating records in all these tables

we  can add a record in Service Fulfillment Task Step to create a task, can we update Short Description or Description with variables data in Service Fulfillment Task Step.
