you can search for service catalog as a trigger for example. Please share a screenshot or provide more details to better understand your reuiqrement

Please check if you have 'Flow Designer support for the Service Catalog plugin'(com.glideapp.servicecatalog.flow_designer) installed on your instance.

you cannot create flow on sc_req_item table as it's not allowed by ServiceNow. This is OOTB behavior

You can use business rule and handle the script there or call a subflow and handle the logic there if you want something to run on RITM insertion
