I can't seem to find any documentation that shows the actual installation steps and the system/resources for ITSM Pro. Does anyone know where I can find it?

Sorry about that; you won't find any documentation online about the requirements or installation guide for an On Premise instance of ServiceNow. I've only had limited experience with this scenario, but in both cases ServiceNow was directly involved with the setup and installation of the instance. All of the requirements came out during the initial project kick-off (which I wasn't a part of I'm afraid) and were provided from the technical team.
If advanced information is required I'd suggest that you contact your ServiceNow Account Manager and see what information they can provide.

ITSM Pro is more of concept than a thing; basically it's a bundled subscription that includes enhanced features not available without an additional paid subscription otherwise. ITSM is the entry level, PRO includes some curated features that help you take further control and optimize your processes.
If you take a look here, and select packages you can see the list of what is included with PRO:

The PRO subscription gives you the right to activate the additional plugins; so with a base ITSM subscription you would need to activate the following to take advantage of PRO:
Continual Improvement Management
Dynamic Translation
Predictive Intelligence
Performance Analytics
Service Owner Workspace
Vendor Manager Workspace
You can search for these by name under plugins to active them, etc.

Hi
I appreciate that information, but it doesn't give me any documentation on how to actually do the installation. I will be putting this in a "closed" environment....so it won't be cloud based. I see how to add / activate different features, but how do I determine what kind of server/storage/memory resources I will need for an installed instance.
