Which OOB script sets the expected start date on Task to current time when it is created?

Please provide screen shot of the field. and are you talking about change task from? You can check onLoad client script .

If you are talking about catalog tasks then there is a script include 'CatalogTaskGenerator' , it is setting that field with current date.
