I am trying to create a flow on a catalog item. I am not able trigger the flow on Requested Item table. Option is not showing for me to select the RITM table

Create a flow and trigger on sc_request table instead.
I had a similar requirement. Will share the steps how I achieved by triggering on sc_request table

You dont even need to attach this flow to the catalog item.
We usually attach workflow to the catalog item in process engine
