ITSM catalog clean up

Hi All,

I have been using ServiceNow system for ITSM for several years now. Almost all the catalog in ITSM has been customized as per the business requirements over the years. Now, we have recently procured GenAI and it does provide the correct information/conversation/catalog while querying. I know that we need to cleanup existing ITSM catalog to OOTB so that conversation on GenAI happens. In order to do that, it may take several months all together as it requires a team to analyze the 1. existing ITSM functionality, 2. existing workflows, 3. Gap analysis between AS-is to to-be (OOTB), etc., Is there any other easy way so that we do not disturb the existing system and still use the GenAI feature comprehensively.
