Is there a way to check the update log for custom table records?

You can, you just need to enable auditing on that table: https://docs.servicenow.com/en-US/bundle/sandiego-platform-administration/page/administer/security/t...
Then you can access History > List via the context menu on those records.

Hello,
You can check the "updated by" field for the record, which shows the very last person that updated that record, otherwise, auditing via the method I described above is the only way.
