Source Control for ServiceNow Product Enhancements

G'day,

I've been investigating the approach of using global app bundles to manage the enhancements our business makes to our ServiceNow platform, then linking it with source control to provide governance around those changes.  This provides an enhanced management approach, as we can easily see all of the changes we've made across the platform through one "view" and alter accordingly, as well as simplifying the deployment process through environments.

 

This works extremely well when making changes in the Global scope, however I'm not entirely clear on how to apply this approach to other ServiceNow products (e.g. CSM), or if it's possible.  As can be seen by the screenshot below, Studio gives the impression that I can link the Customer Service app to source control, but is that appropriate?  And if it is appropriate, is there an issue if I modify an OOTB record (e.g. compromising the product during upgrades)?
