I go to System Definition > Tables and open the record for the table I wish to delete. The "Delete" button does nothing and the table is not deleted. Also, the table is a data source (x_g_......._software_data_source).

You cannot delete data source tables directly. Go to Import Set Tables > Cleanup instead. This will allow you to delete the data source. It will also delete the associated tables and data that you might miss otherwise.
