Even with all of the relevant SOM Plugins installed in a PDI, I am unable to see any of the application menu options on CSM/FSM Configurable Workspace? Are there any prerequisites that I may have missed here? The plugins have been installed in the order specified in the Bootcamp but still nothing shows?

Just quick check, did you tried logging out and logging in again? or try in other browser or Incognito mode as it could be cache issue.

Have you installed below Plugins?
Pluggins:
1) CSM and FSM Configurable Workspace Foundation
2) Order Management for Telecom, Media and Tech App id: sn_om_tmt
3) Product Configurator
