Hello,
Once a project is set to Closed status, we want that date to be shown in a field. Once the status changes to a previous status, the field should be cleared. And as soon as it is Closed again, that date will be used again.
Is it possible to achieve this and if so, how do I go about it?

@Marielle Beset Please look into the Actual End Date field on the Project Dates tab. This date is populated when the Project state is set to Closed. If any of the tasks become WIP again then these date becomes blank.

@Marielle Beset These is again an OOTB behavior that the planned end date gets populated into the actual end date when the Project status changes to Closed. The Planned end date is a dynamic date and you need to keep it up-to-date based on the current progress then your actual date should show correctly. However you can always change your actual end date of tasks from the planning console and the project actuals end date will be rolled up accordingly.
