How can I get result from lookup records on sys_user and generate a list with user_name and name?

if you are referring to Flow Designer "Lookup Records" then refer below steps

-> you can use For Each Flow logic to iterate over those "Lookup Records"

-> then use Log step to add the user_name and name in system logs
