Update Record: Process Automation Designer where does this activity get created

I'm working with process automation designer on an onboarding order guide. I have an update record activity after the first requested item is completed to update the Requested for field with the new starter name replacing the requestor so that the follow on hardware requested items can be fulfilled.
Ideally I'd like to automate updating the requested for field with the new starter name (any guidance much appreciated), but to get started I'm configuring user input for the Service Desk to do this via the update record activity. My issue is whilst I can access this via Test on the process in Process Automation Designer I can't locate the record and impersonating the service desk I don't see it in their work queues even though it is configured to their assignment group.
Where does process automation create this activity record?
