Can I have any advice about the best way to store a record of changes made in ServiceNow?
We currently don't have a defined method and are keen to improve this.

you can maintain a documentation which lists down customizations done in the instance
There is no standard document for this.
If my response helped please mark it correct and close the thread so that it benefits future readers.

Hello @Lisa22
Update sets are a great way to track changes. They allow you to group a set of changes and move them between instances. Always create an update set before making any changes.
Maintain detailed documentation for all configurations, customizations, and scripts. This includes adding comments in scripts, descriptions in fields, and keeping records of configurations. (This one ideally no one does as all are busy enough in development but if done its really helpful for new onboarded developer or person who want to go through over your instance work).
Establish clear governance and change management processes. This includes defining clear policies and procedures for change management, automating change request submissions, and conducting rigorous risk and impact assessments.
If my response has helped you hit helpful button and if your concern is solved do mark my response as correct.
Thanks & Regards

ServiceNow does not provide a standard document for tracking customizations, but you can create and maintain your own documentation for better governance and auditability.
Please mark correct/helpful if this helps you!

Hello @Lisa22
I hope every organization usually used a "confluence pages" to record every release that has gone in production. It is having the list of all the stories and release notes and details. This helps keep tab on every change that went in production either via update set of manually.
If you are not talking about the changes in production and just everyday changes how you can move - then update set is your choice.
Kindly mark my answer as helpful and accept solution if it helped you in anyway,
