How to add changes to an update set after the changes have already been made

I know aric.wilber knows how to do this, I was doing work in an instance and my PM just now said that he wants me to put it in an update set...How do I do that now that I've already spent all day adding items into Service Catalog? Also, that is all I've been doing--entering items and bundles into SC. Do I have to do an update set or can we just do something simpler to get all the data when we merge to PROD?

Aric,
I tried to follow this procedure but, when I right-click the column header, the context menu does not contain an "Update all" option. I am on Istanbul. Are you aware of something that has changed to remove this context option or is there a specific role required to access it?

If you do not see the update All context option it has either been removed by an admin or you haven't opened the list of updates in a new window.
