need to calculate the expected time for catalog item

i have a requirement. I would like to add an expected fulfillment time to catalogue items on the IT portal.

Rather than adding a standard 3-5 days i would like to use live data and at the last month of data to provide a dynamic time that shifts and provides an accurate estimate.

 

Can anyone please help me how to achieve this.
