Hello, 

How can we specify which Application services or Business Applications within ServiceNow utilize SSO for authentication?

This would most likely be a dependency of one Application Service (the SSO consumer) to another Application Service (the SSO provider).  For example, my ServiceNow Production instance would be an Application Service, which could have a dependency to my Azure AD environment, which provides the multifactor SSO for ServiceNow.
