We have created a "integration registry" for policy exception on change request table as below. When we care clicking on policy exception UI action a pop up will be shown as below which will have 3 questions which are configured in Assessment metric. My question can we hide 1 question based on the response of the other or please let me know what are all the capabilities that we have here.

The best way is to create a new Assessment which you can select in "Exception questionnaire".
Click on the magnifying glass, click "New" to create a new survey which you questions and dependency using designer:
