As the CSA exam is currently being taken on Yokohama, how come the CSA course is only available on Xanadu or am I missing something?

Course contents in ServiceNow University are refreshed periodically. You can expect new content for CSA based on Yokohama or Zurich release in future.
For taking exams, complete CSA course in Xanadu and go through release notes for Yokohama release specific to CSA modules.

Course coverage on Servicenow University takes time to be updated with the latest release so many time syou will see that Exam will be on new release while course may be on previous release. Servicenow is sending notifications for expiring the previosu version's course and soon many will be retired/repalced with the latest version so nothing is wrong here.

Vouchers are valid regardless of the course version you take. Once a voucher is issued, it remains valid for one year—so there’s no need to worry. Just make sure you’re well-prepared for the exam.
There may be a few updates in the newer versions, but based on experience, only about 2–5 questions typically change. The official eBook or training material is still the best and most reliable source for the exam.
Go through the eBook thoroughly 2–3 times, word by word, and practice the labs carefully. If you do that, you’ll be well prepared for the exam.
