Make "Default view" for all users

Hello,

I have three problems that could really use the community's help. Thank you in advance!

  1. How can I check which view users are using when it comes to incident and other forms?
  2. How to make "Default" view the preferred view for ALL users (ITIL and others) on forms like incidents...?
  3. How to hide the option for a self-service view?

Problem right now is, as admins we create new mandatory fields when folks are submitting these forms. But some users opt into self-serv view, and the new fields we create are not being added to the self-serv view, and they can easily bypass the mandatory fields and submit the incidents.
