there's an OOTB dashboard in the Now Assist Admin, have you checked that?
It has insights and details about how the Now Assist is used, perhaps it can have some answers for oyu.

navigate to Now Assist Admin > Performance >Usage Summary / Adoption
(or go to: https://yourinstance.service-now.com/now/now-assist-admin/usage-and-adoption )
There are these OOTB reports that can be further filtered by Date (e.g. Last 3 months), Channels (In product, NA Panel, NA Virtual Agent) or Products (ITSM, CSM, HRSD ..... depends on what you have activated)
