Flow Designer Best Practices?

My organization is implementing ServiceNow for the first time, and I will be focused on Request Management and the Service Catalog. Our goal is to create all our fulfillment workflows through Flow Designer, as this seems to be the common wisdom for new implementations. 

As I begin to make some flows and tinker in my PDI, I've noticed several of the "little things" that I seem to be missing. For example, I had forgotten to add Stages to my flow, so there was no information on fulfillment in the Portal when that item was requested. In other instance, the SCTASK I was generating from my flow lacked some of the information from the RITM that would be needed. 

 

I am curious to see if anybody has a set of best practices/a list of 'don't forget to...'s/helpful resources for using Flow Designer that they might share.

Thank you both for pointing me in the right direction, these posts are very useful.

 

As a follow up, many of the best practices mention not to conflict with existing flows and business rules. Are there any effective methods for taking stock of what's in the system already (especially business rules) ?
