We have 2 windows Mid Servers connected to our ServiceNow production.
Do people then use separate mid servers for each non-production DEV/TEST/PREPROD environments?

You want dedicated MID servers for your Production enviomrent that don't connect to your lower instances. You'll want to have reducnecy in your Prod enviornment for instnace if you have a MID server dedicated for intergrations and one for discovery you'll want 4 total in case of a failure. In my past expericne I've seen lower instances share a single MID server with a seperate service install for each instance (DEV and TEST).

Hey.
You could have PROD and PRE-PROD MID Services installed on the same server.
Make sure the server meets the requirements specified here
