Why is it showing as hide: add to cart in catalog item when i click on the template catalog button on the create catalog task option instead of the catalog items and variable sets in get catalog variable ?

That is because the field is available on list view.
You can change the fields by right click on the column and select configure-> list layout
Then bring which ever field you want to se on the list and save it.
Then you will be able to see the required fields.
