I want an email field on incident form but can't see the email field/field type in form designer/form layout.
How to enable/make visible the email field ?

Hello Swapnil,
I hope you are admin,it the admin role user only configure Form/List layout.
So if you want Email field on form.
List open the Form>>Right click on header menu>>Configure>>List layout
From the left bucket double click on "Email" field so that it comes in right bucket.
Save the form.you will get that field on form(if you are admin)
