ITSM Mobile App is Defaulting Priority, Impact and Urgency to Values that are not in my instance

We developed our first mobile app in ITSM Mobile Agent 7.0.0.

 

After deploying up to a higher test instance, the Mobile Agent was now at 8.0.0.

 

The fields Priority, Impact and Urgency, as well as State are showing values that are not in our system in sys_choice, or anywhere else that I can see.

 

The numbers are the same, but it is not our Label.

 

For instance, a P1 (value 1) is 1 - Critical for us, within the mobile app it is coming up as P1 - Critical.

Impact for us 1 - Complete Loss of Service, is, within the mobile app 1 - Company/Multi-Site/All Customers.

 

Where is this in the system? Is it a script or rule? It's annoying it doesn't just use the ones we have in our existing list.
