Unable to see all options in the subcategory dropdown

Hey guys, I'm working on building a condition that includes several categories and subcategories but when I select the subcategory dropdown I only see up to the letter O. I believe there is a setting that's not correct and it's displaying all variables in my environment. I've attached several pictures of what I see when building the condition and am wondering if there is a way to filter out all non-subcategory data.

When I check the choices table I see over 14000 options and it appears all of them are somehow linking to the subcategory field.

On the form, Right click and select "Inspect".  Check whether you have any errors displaying.

The choice list don't have any limitation as such.
