Hi,
So in generic terms it decides the priority of the notification.
Real time example:
Lets Assume there are two notifications on incident form for example When incident goes on hold with weight as 30 and one once incident is commented with weight as 20 and both goes to caller of the incident.
So if the Assigned to person puts the ticket on hold and adds the comments at the same time then this both notifications will be visible in email logs but only one will be sent to user based upon weight of the notification. In this case on hold notification goes to caller as it has more weight.

Email notification weight is defined as a required numerical value for this notification's priority relative to other notifications:
- With the same target table and recipients
- The system only sends the notification with the highest weight

It is same as priority.Notification which has high weight triggers first.(For same target table )
