Today, you cannot, but we're looking to align Now Assist Panel and Virtual Agent soon, and this should hopefully allow you to have the same experience across both conversation assistants.
Can I ask what is your business requirement to invoke an individual AI agent from Now Assist Panel, compared to the same scenario from Virtual Agent?

Did you enabled Now Assist Panel? If not go to "Now Assist Admin > Experiences > Now Assist Panel" and turn on Now Assist Panel and see whether you see this option
