UI Builder: Rename "Activity Stream Compose" tabs (Work notes / Comments / Email)

Is there a way to rename the Work notes / Comments / Email labels in the activity_stream_compose component from UI Builder? 

(from System UI > Messages, it is possible to change the “Email” label, but this approach is too aggressive since it changes the label globally across the entire instance).

Those are the field names, so changing them would mean you change them globally. What's your business case for this requirement?

As a general rule, we want agents (they work from SOW in our case) to interact with users via Comments... and use Email only when sending messages to users outside our organization.

Because of this, we would like to rename the current “Email” label to “Email to Third Party”.

Ideally, we would also like to display an informational notice or warning when selecting the Email option in the compose section, although I understand this might be more difficult to achieve.

you will have to duplicate that "Activity Stream Compose" and then make changes to it and then add again on the duplicate Record page variant. Bit complex to handle

OR

Try to change/override the label for Work notes and Comments for your table and see if that works
