Fields auto populated in Catalog item are not coming over to RITM

We have created a Catalog item that will auto populate the email of the user submitting the request.
However, after they hit submit, and the RITM is created, it leaves that field blank in the RITM and the SCTASK
We are using the auto populate option for the variable in the catalog.
Any help would be appreciated!
