how can we see "field changes" in the activities filter on service portal?
Just like we see in the standard ui

Hi Author,
The Service portal doesn't show any activity history related to fields other than ticket conversations, I believe you have to create a custom widget to get record history activity by Gliding into the sys_audit table.
