Hello Joel,

As per the Wiki Archiving Data - ServiceNow Wiki   on data archiving, archiving data such as Requests, Request Items and sc_task will also archive references/pointers to the Variables which are part of the request item, however it should not be archiving the original Variable that is part of the Catalog Item. Those should still be available in Service Catalog.

Are you seeing otherwise, in which case we can open an incident in HI that will need to be investigated further.

Yes. The archived requested items do not show the variable editor
