How/where can I select the value for Availability = 'Desktop and Classic Mobile' in Catalog Builder?

How can I set the default for the field 'Availabity' for a new Catalog Item that I create through Catalog Builder to 'Desktop and Classic Mobile' instead of 'Desktop Only'?
