Can you have multiple PDF documents generate for a single HR Service?

Is there a way to have multiple PDF documents for a single service? I would also need both documents to have signatures from the Subject Person and the Assigned To. 

I currently have a service with a workflow like this for one document but wasn't sure if it is possible to have 2 different ones.

Yes, you can.  

 

You create two HR task under Service Activity of HR Service form.  Each HR task can be configured for each pdf template, basically you can create many HR tasks for a HR Service
