I got my answer for this question. I'm doing it on incident form and we can achieve it by creating choice options on sys_choice and we can use dependent field to achieve it.
Are Category and Subcategory that you're referring to here variables on a Catalog Item on which you want to make subcategory dependent, or are these fields like on the Incident table/form?
