What triggers Problem Escalation?

I cannot seem to find any supporting documentation that tells me how the Escalation settings are triggered for problem records. There appears to be a field available within the problem form for Escalation with Normal, Moderate, High, Overdue for options, but how does this value appear in the problem module and what are the triggers that change it from one value to the next?

I'm trying to figure out the same thing. Specifically because the Problem dashboard has a tile for overdue items, but I cannot figure out how they are ever flagged as overdue other than it is related to the escalation field I Think.
