I don't think this can be done in the incident table as the updated field is always changed per update, is there any other way ? I don't have access to create any analytics in my department. I need to obtain the number for each day this year, if anyone could point me in the right direction or something I need to request with our service now team. Many thanks

You will need Platform Analytics for this, because of the reason you already mentioned: updated is a field that changes.
Since you also mention you don't have access to create analytics, you will have to reach out to the ServiceNow team to provide you with the data. Maybe it's already being collected and you can build on from something that already exists, or they have to create something for you.
